The Cake Worth Waking Up For
There are mornings, and then there are mornings with Momma's almond coffee cake. The kind where you pour a slow cup of coffee, cut yourself a thick slice, and decide nothing else on the agenda matters quite as much as sitting right where you are. That's the effect this cake has — it turns an ordinary Tuesday into something worth remembering.
The secret is the almond extract. It's subtle but unmistakable — warm and fragrant in a way that plain vanilla just can't replicate. Combined with the sour cream batter, which stays remarkably moist for days, and the cinnamon-almond streusel layered through the middle and piled on top, this is the kind of coffee cake that sets a very high bar for everything else.

Step by Step
Momma's method — layered, fragrant, and worth every minute
Preheat oven to 350°F. Generously grease a 9-inch tube pan, Bundt pan, or 9×13 baking dish with butter or cooking spray, making sure to get every corner and crevice. A well-greased pan is the difference between a cake that releases beautifully and one that tears.
In a small bowl, combine ½ cup sliced almonds, ¼ cup sugar, and 1 tsp cinnamon. Add 2 tbsp cold cubed butter and work it in with your fingertips until the mixture resembles coarse, buttery crumbles. Set aside — this is what makes the whole cake.
In a large bowl, beat the ½ cup softened butter and 1 cup sugar together on medium speed for 3–4 minutes until very pale, light, and fluffy. This step builds the structure of the cake — don't rush it. The color should visibly lighten as you mix.
Beat in the 2 eggs one at a time, then add the 1 cup sour cream and 1 tsp almond extract. Mix until smooth. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt, then gently fold the dry ingredients into the wet until just combined — don't overmix.
Pour half the batter into the prepared pan and spread evenly. Scatter half the streusel over the batter layer. Pour the remaining batter on top, spread gently, then finish with the remaining streusel. This creates a beautiful ribbon of almond filling through the center of every slice.
Bake at 350°F for 50–55 minutes until the top is golden brown and a toothpick inserted in the center comes out clean with just a few moist crumbs. The almond streusel will be deeply toasted and fragrant. Let the cake cool in the pan for 15 minutes before turning out onto a rack.
